Yes, this is possible. Assuming you are using the latest CFX-10, all you need to do is create the plane (or planes) that you want, but turn off the visibility and click 'apply'. Then create a contour plot (CREATE/Contour) and change the Locations drop-down selector to your new plane. If you want to do it across multiple planes then click the square button with 3 dots on it next to the Locations drop-down and then select one or more planes (or other locations) whilst holding down ctrl. Click OK and then apply.
If you also change the Range drop-down to Local then you will get the legend to display extents relative to the range of values across those specified locations only.
