When plotting von Mises stress in ANSYS Classic after a PSD analysis, the default (found through trial and error) seems to be using an "AVPRIN,2" setting; however, this doesn't seem to be documented anywhere. Is "AVPRIN,2" using the Segalman-Reese method and why isn't it documented?

PSD uses Segalman-Reese for SIGE. This has nothing to do with "AVPRIN,2."

"AVPRIN,2" does exist, and it is undocumented. As the command echo notes, it is there for development testing. For simple cases where there is very little cross-mode correlation, then "AVPRIN,2" and S-R will give similar results.
